@halfacoco: This is how you make super thin melt in the mouth crepes with crispy edges. You will need: 2 eggs 20g sugar Pinch of salt Vanilla extract 100g plain flour 250ml milk 30ml water 12g cooled melted butter 1. In a bowl whisk the eggs and the sugar. Add salt, vanilla and half the flour. Mix well until there are no lumps. Add in the rest of the flour. The batter will be quite thick. 2. Gradually add the milk while mixing the batter. Stir in the water and the melted butter. At this stage the batter should be thin and smooth. 3. Heat a crepe pan to medium heat and ladle the batter, turning the pan to spread it. 4. Cook for 1 minute or until the edges detach from the pan, then flip it. Cook for another minute until brown speckled form. 5.
