Ramadan Recipe - Lamb Pilau: Ingredients: For Meat: - 3 tbsp Vegetable Oil - 1 heaped tbsp Ghee - 800g-1kg of Mutton/Lamb - 2 White Onions - Garlic and Ginger Block (or 1 tsp each fresh alternative) - 2-3 Bayleaves - 2 Cinnamon Sticks - 15 Black Peppercorns - 3 Cardamom Pods - Large Pinch of Salt - 1 tsp Turmeric - 1 tsp Cumin - 1.5 tsp Coriander Powder - 1.5 tsp Curry Powder - 3-5 Green Chillies - 2.5 Mugs Basmati Rice - 1/2 tbsp Vegetable Oil - 1 tbsp Ghee - Water as required (amounts shown in method below) Method: 1. Mix together all ingredients for the meat. Place in a pan and cook for 10 minutes whilst stirring to start browning the meat and release the juices. (I added the salt in later because I forgot, you can add it with all the ingredients). 2. Place the lid on and cook for 20 minutes on a medium flame. Remove lid, then stir. The place on a low flame with lid on and simmer for around an hour till water reduces. Stir every 20 minutes. 3. After it’s reduced, add in a mug of water, bring up to boil and then simmer on low for around an hour to tenderise the meat. Do this till sauce reduces fully, be careful to not let it burn so stir every 20 minutes ish. Set aside once done. 4. Get your rice, wash, and then let it soak in water for 30 minutes. After that, drain the water. Add 1/2 tbsp of Oil and 1 tbsp Ghee to a pan and bring up to heat. 5. Add the drained rice to it, and cook and stir for 2-3 minutes. The set aside. 6. Put your meat pan back on the hob, and add 2.75 mugs of boiling water and bring up to heat and then add the chillies. Add in the rice, keeping the heat on medium high, stir continuously till all the water has dried (this won’t take long). 7. Once done, turn the heat off. Place a cloth/tea towel over the pan, followed by the lid. Fold the sides of the cloth up onto the pan lid. 8. Place the pan on the lowest flame setting for 20 minutes. Alternatively you can put it in the oven if your pan is oven safe. 9. After 20 minutes, take the heat off and let sit for 10 minutes.
