My daughter and I made these Pumpkin Cheesecake Cookies together, and they turned out SO good! There’s just something about baking in the kitchen with your kids that makes a recipe even better. ❤️ And then you add browned butter? You really can’t go wrong. These cookies have a soft, spiced pumpkin cookie wrapped around a creamy cheesecake center, then the whole thing gets rolled in cinnamon sugar before baking. The outside gets that gorgeous crackly finish while the inside stays soft with that surprise cream cheese filling. One little trick that makes a big difference: strain the pumpkin first. Removing that extra moisture gives the cookies a much better texture. Cheesecake Filling * 8 oz cream cheese, softened * ¼ cup granulated sugar * 1 egg yolk * ½ tsp vanilla extract Beat together until smooth. Scoop into 12 dollops, about 20 grams each, onto a parchment-lined tray. Freeze for 1 hour. Pumpkin Cookie Dough * ¾ cup unsalted butter, browned * ½ cup pumpkin purée, strained (start with about 1 cup before straining) * ¾ cup granulated sugar * ¾ cup dark brown sugar * 1½ large egg yolks (1 whole yolk + half of another) * 2¼ cups all-purpose flour * ¾ tsp baking soda * ¾ tsp cream of tartar * ¾ tsp salt * ¾ tsp cinnamon * ⅜ tsp nutmeg Cinnamon Sugar * ⅓ cup granulated sugar * 1 tsp cinnamon Instructions 1. Make the filling: Mix the cream cheese, sugar, egg yolk, and vanilla until smooth. Scoop into 12 portions and freeze for 1 hour. 2. Brown the butter: Cook the butter until golden amber with browned bits and a nutty aroma. Let it cool until it is no longer hot or runny. 3. Make the dough: Stir together the browned butter, granulated sugar, brown sugar, egg yolks, and strained pumpkin. 4. In a separate bowl, whisk together the flour, baking soda, cream of tartar, salt, cinnamon, and nutmeg. Add to the pumpkin mixture and stir just until a dough forms. If the dough feels too sticky to work with, refrigerate for about 1 hour. 5. Fill the cookies: Scoop about 3 tablespoons (75 grams) of dough. Flatten it, place a frozen cheesecake filling portion in the center, and completely wrap the dough around it. 6. Combine the cinnamon and sugar and roll each cookie in the mixture. 7. Place on a parchment-lined baking sheet and bake at 365°F for about 12 minutes. Bang the pan gently on the oven rack about halfway through baking to help create those crackly tops. 8. Cool for at least 10 minutes before eating. Enjoy them slightly warm for a softer center, or refrigerate them for more of a cheesecake-style filling. These are definitely one of those fall recipes I’ll want to make again—although getting to make them with my daughter was probably my favorite part. ❤️ #PumpkinCookies #PumpkinCheesecakeCookies #BrownedButterCookies #FallBaking #deliciouslyBold
