INGREDIENTS • 2 cups Long Grain Rice (washed and rinsed several times) • 1 cup Spanish Onion (diced) • 3- 4 cloves Garlic (chopped) • 2 tbsp Tex- Mex Seasoning • Salt and Black Pepper (for taste) • 1 1/2 cups Vegetable Stock • 1 cup Tomato Sauce • 1 tsp Dried Turmeric • 1/2 cup Jalapeno Pepper (sliced) • 1/2 cup Cilantro (roughly chopped) INSTRUCTIONS • Saute onion over medium-high heat in a large heavy skillet or pot until the onion is translucent • Add garlic and stir for a minute • Add rice, Tex-Mex, 1/2 tsp of salt, and 1/2 tsp of black pepper and cook for another minute • Add stock and tomato sauce.
