@backyahdbbq: I use wood chunks when I smoke on my Weber Smokey Mountain or Weber Kettle and like to use chunks that are roughly 3 inches by 3 inches. A lot of the time the smaller bags of chunks have a lot of wood chips in them that will fall through the grate. Instead of buying bags of chunks, I buy the bigger bags of splits and make my own chunks. I start by splitting the bigger splits down to 3 inch sections with an axe, then use my chainsaw to cut them into 3 inch chunks. If those chunks are too big, I’ll break them down further with a hatchet. I’ll then put them back in the bag where they’ll stay until my next smoke. Music by @dimitris_loiz amazing guitarist.
