Using a whole animal was also definitely around in Europe too let’s be real

I had breakfast at one of his places in 2019 and still think about the bacon sandwich. Three ingredients (I think) and it was perfection.

Had the pleasure of eating at St. John once in my life, and let me tell you...I was too drunk to appreciate any of it.

I never enjoyed bone marrow until I tried it St. John. It changed my life. I still dream about it. Never had it as good anywhere else.

Asia, África, South America... and any place in rural Europe. Our Galician national feast is literally the *whole* pig, absolutely no waste.

I get mom and pop shops charging for butter, but chain restaurants should not. Let's normalize giving people their needs for cheaper

I think you should also mention that British cuisine is notably offal-based. Before other cuisines took hold in 60s-90s, most brits ate the lesser desirable cuts of meat and Fergus brought it back to the culinary world.

Just went last week. Still so good and reasonably priced. Had sweetbreads with mint and radishes. 😋

A brilliant chef indeed. Just would like to point out bone marrow has been common throughout Europe before Henderson. Love it!
