@primalgourmet: Grilled Tri-Tip with Salsa Rossa Piccante… charred on the outside, juicy in the middle, and loaded with wood-fired flavour. The roast is marinated in a combination of herbs & spices, grilled whole on my @Traeger Grills in the style of Santa Maria BBQ, and basted with a garlicky, oil and vinegar. To keep track of the cook, I used a @MEATER probe. It records internal and ambient temperatures and sends estimated cook times right to your smart phone. I also made a spicy tomato salsa studded with charred red peppers and a hint of cinnamon that pairs beautifully with a variety of grilled meats. It’s a bit different than the fresh salsas commonly served with a Santa Maria-style tri-tip but it works really well.
