Bringing my favorite dessert back 🤎 Hey besties, let’s make some sticky toffee pudding 🍂 This was and still is, my favorite dessert. The warm, gooey sweetness paired with cold vanilla ice cream melting on top and the way it literally melts in your mouth… it’s everything I could ever want in a dessert and to me the ultimate comfort dessert 🍂🍁 Ingredients For the Cake: • 14 Medjool dates, pits removed (I got mine from Target with the pits already removed!) • 1 cup hot water • 1 1/4 tsp baking soda, divided • 1 cup all-purpose flour • 1/2 tsp salt • 1 tsp baking powder • 3/4 cup dark brown sugar • 4 tbsp unsalted butter, softened • 1 large egg (room temp) • 2 tsp vanilla bean paste For the Toffee Sauce: • 3/4 cup dark brown sugar • 1/4 cup light brown sugar • 1/2 cup unsalted butter • 3/4 cup heavy cream • Pinch of salt • 1 tsp vanilla bean paste ✨ Instructions ✨ Making the Cake 1. Start by chopping the dates into small pieces. Add them to 1 cup of hot water (I boiled my water and took it off the stove) along with 1 tsp baking soda. Let them soak for 10 minutes, then blend everything together until pureed. 2. In a large bowl, beat together the softened butter and dark brown sugar until combined. Add the egg and beat until creamy, then mix in the vanilla bean paste. 3. To the same bowl, add the flour, salt, baking powder, and remaining ¼ tsp baking soda. Gently fold everything together until just combined, then whisk in the pureed dates until everything is fully combined. 4. Line an 8x8-inch baking pan with parchment paper and evenly pour in the batter. 5. Bake at 350°F for 30–35 minutes, or until the center is set and a toothpick comes out with just a few moist crumbs. Toffee Sauce 1. In a saucepan over medium heat, melt the butter, dark brown sugar, and light brown sugar together. 2. Slowly pour in the heavy cream, stirring as you pour, then add a pinch of salt. 3. Bring the mixture to a gentle boil and let it cook for about 8–10 minutes, stirring occasionally. 4. Stir in the vanilla bean paste, then remove from the heat. The sauce will continue to thicken as it cools. Once the cake comes out of the oven, let it cool for 30 minutes then use a fork or skewer to gently poke holes all over the top. Pour half of the warm toffee sauce over the cake, letting it soak into all those holes.
