HONEY CHIPOTLE CARROTS IN A BLANKET #PinterestPartner #PrimalKitchenPartner #EatYourColors— if you missed my pop up with @pinterest and @Primal Kitchen Foods last month, don’t worry! You can now make those recipes at home. Inspired by the latest Pinterest food trends, another one I want to share is this super simple and flavor-packed carrots in a blanket. Inspired by the vegan pigs in a blanket I’ve seen all over Pinterest, I love pairing this appetizer with Primal Kitchen’s Special sauce which or Buffalo sauce. Primal Kitchen sauces bring so much flavor and color to my kitchen! #appetizer #snack #roastedcarrots #EasyRecipes Makes 20 bites 50g canned chipotles in adobo sauce 50g honey 7g minced onion 5g caraway seeds Salt and pepper 20g avocado oil 250g baby carrots 0.5 lb puff pastry, thawed 1 egg Flour, for dusting    Heat the oven to 425°F. Whisk the chopped chipotles, honey, onion, caraway, salt and pepper, and oil until combined. Add the carrots and toss to combine. Place the carrots on a parchment paper-lined sheet and bake for 15 minutes. There will be lots of leftover marinade in the bowl. Add the roasted carrots back in the bowl of marinade and toss to coat. Heat the oven to 400°F. On a floured surface, roll the pastry into a 11 X 15-inch rectangle. Brush with marinade on top. Slice into 10 strips. Slice the strips in half so you’re left with 20 short strips. Roll one or two marinated carrots per strip. Place on a baking sheet and chill for 10 minutes in the freezer. Whisk the egg with 1 tbs water. Brush the pastry with egg wash on top and sprinkle with flaky salt and caraway seeds. Bake for 20 to 25 minutes until puffed up.
