Nothing feels more fall to me than with a big bowl of soup, and French Onion is definitely in my top 5 fave soups of all time — paired with a Sidecar and you’ve got yourself a lovely lil cozy evening ✨ SIDECAR — • ¾ oz lemon juice • ¾ oz cointreau • 1½ oz cognac • garnish: sugar rim, lemon twist FRENCH ONION SOUP • ~3 lbs yellow or sweet onion • 4 tbsp butter • 2 tbsp evoo • salt & pepper • 1 tbsp AP flour • ¾ cup dry white wine • ¾ cup dry sherry • 2 tbsp champagne vinegar • 1 tbsp worcestershire • 2 qt beef broth • thyme bunch • 2 bay leaves • crusty bread, cut into cubes • garlic clove • gruyere, shredded Slice onions and caramelize them in butter, oil, and salt for about an hour and a half. You really don’t wanna skip this step! They take time!!! Season with pepper and add wine, sherry, vinegar, and worcestershire. Let it reduce. Add flour, stir, let it cook for another minute, and add beef broth with thyme and bay leaves. Let the soup simmer while you roast your bread cubes (tossed in olive oil) at 450F for about 8 minutes. Once they’re done, rub them with the garlic clove. To serve your soup, pour into bowls and top with bread cubes and cheese.
