Replying to @PaigeB here’s what we mean when we’re talking about percentage rise. You can use the percentage rise of your dough alongside its temperature to figure out when it’s time to cut off the bulk fermentation and shape your dough. You still may need to do a little bit of trial and error, but this is a good benchmark to work from to get pretty darn close. Refer to The Sourdough Journey’s chart, easily findable on Google, to match the temp of your dough to the proper % rise ##bulkfermentation##sourdoughtok##sourdoughbread
