@sooziethefoodie: This is the longest fruit I have ever seen- it is called a cassabanana! It is definitely one of the more interesting fruits I have tried- it doesn’t look like, feel like, or taste like a banana at all! The rind is not edible and the firm part of the fruit reminds me of eating raw squash. Now here is where it gets really cool- the core is super juicy and tastes like cantaloupe with a light hint of vanilla. The seeds are edible too! I strained out the juice then roasted the seeds and the firk flesh of the fruit. When roasted it has the taste and flavor of butternut squash absolutely delicious. I added longan sugar and sea salt when roasting for a little extra sweet and salty flavor. Then I roasted the seeds with salt and those were without a doubt my favorite part. The taste was crunchy, nutty, and absolutely delicious. I added the juice to the bottom of a bowl then layered the roasted fruit and seeds. Each layer was completely different and special in it’s own way.
