Serves: 4-6 Prep time: 14 minutes Simmer time: 1 hour Special tools: a nice pot Ingredients: 3 cloves garlic, chopped 1 onion, diced 1 carrot, diced 1 celery stock, diced 1lb pot roast beef, diced 1 splash EVOO (we like Terra Delyssa) 1 tablespoon tomato paste 1.5 cups red wine 2 litres really good beef stock (like left over pot roast stock) 1/2 cup barley Method: 1. Sauté all veggies in olive oil and coat with tomato paste. 2. Deglaze with wine and reduce by half. 3. Top up with stock and add barley. Simmer for 45 minutes. 4.
