Pro tip from a non pro try freezing it super good that way too. You’ll still need to drain when ready to cook. Changes the texture to be crispy

Imo pressing firm/ex firm tofu just dries it out. I’ve found the best way to prep tofu is to soak it in boiling salted water, and then pat it dry

Cut into pieces, place on a sheet pan lined with parchment paper, convection bake at 350 for 20-25minutes, it will be firm like a chicken breast.
