Pro tip from a non pro try freezing it super good that way too. You’ll still need to drain when ready to cook. Changes the texture to be crispy

Imo pressing firm/ex firm tofu just dries it out. I’ve found the best way to prep tofu is to soak it in boiling salted water, and then pat it dry
