CREAMY SPINACH & BUTTERBEAN STEW w/ chilli and chorizo 🔥 i’ve entered my butterbean era and i know you will too after making this! this 15 min, one pan, zero faff meal gives you more time to spend your weekend snuggled up on the sofa ☁️ (oh and it’s perfect for the meal prep huns too!) Serves 2-3 2 chorizo style sausages (I used @Heura ) 2 shallots, finely chopped 4 cloves garlic, minced 400g butterbeans (I used @Bold Bean Co ) 100ml non dairy cream 1/2 tsp ground nutmeg 1 bay leaf 2 tbsp nutritional yeast 1 tbsp apple cider vinegar 40g vegan cheese (I used @Violife cheddar but use your fave) 200g spinach, roughly chopped Lots of salt and pepper To serve 2 tsp chilli oil 4 sliced sourdough bread, buttered 1. Start by removing the sausages from their casing and frying off until golden. Set aside. 2. In the same pan, fry off your shallot for 5 minutes before adding your garlic. Stir and season well. 3. Add in your remaining ingredients apart from the spinach and leave to simmer on low heat for around 10 minutes, stirring occasionally. 4. Add the spinach, mix until wilted. Taste for seasoning. 5. Serve up with your crumbled chorizo sausages on top and a drizzle of chilli oil.
