@geris.kitchen: Carrot and Walnut Cake 🥕 Ingredients: 4 eggs 50g white sugar 120g dark brown sugar 200ml oil 220g self rising flour 1 cup grated carrots 1 tsp sweet mixed spice (cinnamon, nutmeg, clove, ginger) 1/2 tsp cinnamon 90g chopped walnuts 40g golden raisins Cream cheese: 200g cream cheese 50g whipping cream 50g powdered sugar Method: pre heat oven 150 degrees C. 1)To a large bowl, add the eggs, sugar and oil. Mix well. 2) add flour. Mix. 3) add carrots, nuts raisin, vanilla and spices mix well. 4) pour mixture into a lined 9inch round baking tin. 5) place in center oven and cook for around 40-45 minutes. 6) transfer to wire cooking rack and leave to cool completely. 7) whilst your cake is cooking whip up all ingredients for the cream geese topping.
