This is one of our all time favourite recipes!  #PenneAllaVodka #Penne #Pasta #PastaRecipe 🤤 Penne alla Vodka 🤤 Ingredients • 500g Penne (1 pack) • 250ml heavy cream • 3/4 cup Parmigiano Reggiano, grated (reserve some for garnish) • 140g tomato paste • 1 small brown onion, finely chopped • 3–4 cloves garlic, minced • 1 shot vodka • 2 tsp chilli flakes (adjust to taste) • 2 tsp black pepper • Salt, to taste • 4 tbsp olive oil For Serving • 2 tbsp fresh parsley, chopped • Burrata cheese • Extra chilli flakes • A drizzle of olive oil Instructions 1.  Boil It: Cook pasta in salted water till al dente (according to the time on the pack). Reserve 1 cup of that liquid gold (pasta water), then drain. 2.  Sauce It Up: In a large skillet, heat olive oil. Sauté onion and garlic until fragrant (about a minute). Toss in red pepper flakes. 3.  Tomato Time: Add tomato paste and cook for a minute.  4.  Creamy Dream: Stir in cream, the shot of vodka, salt, and pepper. Lower the heat and let it all come together in silky harmony. 5.  Marry the Pasta: Toss in the pasta, cheese, and a splash of pasta water. Stir like you mean it! Add more water if the sauce gets clingy. 6.  Plate & Impress: Serve in bowls, top with a heavenly scoop of burrata, sprinkle parsley and chili flakes, and finish with a drizzle of olive oil and extra Parmigiano.
