Steak and Eggs :
Cat 6a for POE cameras. They’ll only get higher resolution and easy replacement once they do. Local video better in the long run with better cabling.

I built in 2001 and pulled cat5e everywhere. Works great still. We are building again and will pull most drops as cat6 and will use flex conduit.

Cat8 was only about 15% more to install in my personal home. I did it for bragging rights and to test honestly. I install 6a in my jobs and customers

Cat 6a with smuft tubes or pvc. Why? You don't know where everyone will be. I have office in dining room. Xbox in two bedrooms. Gaming pcs in 4 rooms.

The best you can reasonably afford planned for 30 years out. Will cat6 or 7 still be relevant? Prolly not. Emt it and make upgrading cables easier.

Started my new build about 3yrs ago. I ran Cat6A to every room because there wasn’t much of a cost increase to it over Cat6A. Cat7 was a good bit more

The reasonable answer is CAT6 if none of ur runs are going over 50m. 10gb/s capability should be the target for all but the enthusiasts.

There’s barely a price difference between 6, 6a and 7. Why risk it?

people who have a hobby/professional requirements for more cat6a or fiber. Most people won't spend the money on equip to handle those speeds

I still say cat 6a is a over kill. It does not provide any edge. Btw which broadband is pushing 5 gig?

Cat5e for simple 100/1000 devices. Cat6+ for video distro

Cat6 if the budget allows go with 6a. But definitely do Smurf tube or conduit runs future proof the build.

I added Smurf tube from my network room to the attic and so if need be I can drop new cable on the entire 2nd floor. 1sr floor is easy enough to snake

I just don't think your average home would see much of need for cat 6a even if they had a NAS on premise
