#onthisday Butter Paneer Pasta 200g Paneer (about 20 medium cubes) 350g Penne/ pasta of your choice Season the defrosted paneer with 1 tsp Butter Chicken seasoning and 1 tbsp oil. Set aside. Then prepare the sauce: Add 1 tbsp butter to a pan with 1tbsp oil. Infuse this with 1 tsp jeera seeds, 1 bay leaf, 1 green chilli and a sprig of curry leaves. Once that becomes aromatic, add 1 sliced onion, 1 tsp ginger & garlic, 1 sliced tomato and 1 tsp tomato paste together with a handful (30g) of softened cashews. Add in powdered spices. I wouldn’t recommend that you rely fully on the butter chicken seasoning as it’s quite intense. So I’ve added: 1 tsp Kashmiri masala, 1 tsp Butter chicken seasoning and 1/2 tsp turmeric. Mix everything well and allow it to soften slightly. Then you can blend. While the sauce ingredients are blending, you can add to the same pan: - 1 tbsp butter - The seasoned paneer Fry for about 8 minutes and add in the sauce. I’ve added an additional 1/2 a cup of water with leftovers from the blended mix. If you’re not making a pasta, I wouldn’t recommend adding more water here. Add salt to taste. Allow to simmer for 6-8 minutes then add 1/2 a cup of cream. Turn the heat to a medium setting and allow it to simmer. Add in the cooked pasta, give it a good toss but gently as you don’t want to break the paneer. Sprinkle a pinch of Kasuri methi and drizzle a tbsp of cream to finish off. I’ve also added a handful of coriander to garnish.
