Emerald Soup | Soups So Good It Can Cure Any Sickness Ep. 6 also known as Chinese spinach soup, polonchay soup, jade soup. A green bowl of warmth, that’s silky and velvety! INGREDIENTS: Emerald Soup: - 3 vermicelli noodles - 1 bunch polonchay (or spinach), roughly chopped - 6-8 cups chicken broth - 500g shrimps, peeled & deveined and minced (save the shells for the broth) - 1-2 cups oyster mushrooms, minced - 1 pack of firm tofu. sliced - 8 cloves garlic, minced - 1/2 teaspoon white pepper or to taste - 1 egg, lightly beaten INSTRUCTIONS: - Start by peeling and deveining your shrimp, making sure to set aside the shrimp shells for the broth. Once peeled and deveined, mince until slightly chunky. - Next assemble your broth by sautéing the shrimp shells in a hot pan with some oil. Add in chicken broth once the shrimp shells have all turned orange, and set aside for later. - add your garlic, mushrooms and diced shrimp, and sauté in a hot pan. Add the shrimp broth along with white pepper and the vermicelli noodles. Add cornstarch slurry to thicken. Let this simmer for a few minutes while you make your spinach base. - Blanch your spinach in water, and pulse with a blender to get a more thick consistency. Add this into your broth along with your tofu and finish with a lightly beaten egg and stir immediately once added - Serve and enjoy! #PolonchaySoup #EmeraldSoup #Soup #ASMR #ASMRCooking
