Seedy Rye Bread Recipe 🧸 My simple, d e l i c i o u s rye bread recipe! I’ve been baking (and eating) a couple of these every week! They’re so filling and delicious, PERFECT for sweet or savoury toppings! 🤎 Ingredients - ♡ 600g dark or light rye flour or a mixture ♡ 500ml water ♡ 12g salt ♡ 3g instant or dry yeast ♡ 3tsp herbs or spices of your choice (I didn’t use any for this one - cumin and coriander are great for a savoury loaf, or cinnamon for sweet!) ♡ 4 handfuls mixed seeds, or seeds of your choice ♡ 4-6 tbs molasses (it gives the most wonderful flavour to the bread! You could also use honey or malt for a sweet loaf) Method - ♥︎ Measure the water into a big bowl and add the yeast. Let it sit for 10 minutes to dissolve. 
 ♥︎ Add the flour and the salt and any of the other ingredients you are using. ♥︎ Stir together until it is well mixed.
 ♥︎ Grease a bread tin with coconut oil  ♥︎ Flop the dough from your bowl into the tin. Don’t press it down. Touch as little as possible - it will move and fill the tin itself. 
 ♥︎ Optional - you can sprinkle some rye flour and seeds on the surface of the dough. Cover the tin with a tea towel or shower hat – raise the surface of it above the dough so that when the dough rises, it does not stick.  ♥︎ Leave it for 2-5 hours – it depends on the heat in the kitchen. Don't try to speed it up by placing it in an overly warm place as rye does not like to be too warm. Check it every once in a while. Rye is ready for the oven when there are little holes all over the surface. Keep your nerve and wait for that point. ♥︎ Heat the oven to 200 degrees C. Pop it in and bake for 45 minutes. Remove from oven and remove from tin. Let cool completely on a wire rack. Rye is best eaten the next day and will last for 4 - 5 days. You can also slice and freeze (I do) and it will last for months.
