MEAL PREP WITH ME 🍽️  This weeks meal prep is a good one! We have a banoffee pie weetabix cheesecake for breakfast and a vodka penne protein pasta for lunch. Make sure to press save for later☝🏼 BREAKFAST: •Banoffee Pie Weetabix Cheesecake •429 kcals per serving - 26g PRO, 68g CHO, 6g FAT For 1 serving: -2 weetabix -40/50ml of milk (the less the better as it will make it more sticky, not runny) -1 small caramel yoghurt -50g of banana, sliced -150g of 0% non fat Greek yoghurt -Dark chocolate, grated Method: 1. Add the weetabix to a bowl and break up. Pour in the milk and mix well until it starts to stick together. Keep pressing it down for it to stick and smooth it down.  2. Add the caramel yoghurt and spread evenly. Then add the sliced bananas and top with the Greek yoghurt.  4. Grate some dark chocolate on top and place in the fridge overnight or at least an hour.  LUNCH: •Vodka Penne Protein Pasta •487 kcals per portion - 48g PRO, 30g CHO, 17g FAT Serves 4: -480g of uncooked chicken breast -1/2 tsp each of dried oregano, basil & parsley -200g of uncooked penne pasta -3 cloves of garlic -1 red onion -1 red pepper -1 tbsp of olive oil -4 tbsp of tomato paste -2 tbsp of vodka (optional) -80ml of double cream -1 tsp of chilli flakes -20g of grated parmesan  -Fresh parsley, chopped -Salt/pepper Method: 1. Boil and cook the pasta for 8-10 mins. Drain and keep the pasta water. 2. Spray a pan with oil and fry the onion and garlic until softened. Add a little bit of water. 3. Add the chicken breast and red pepper. Season with the oregano, parsley, basil, salt and pepper. Fry until cooked, then remove from the pan. 4. Add the olive oil to the same pan and the tomato paste. Fry off until it turns darker and caramelizes. Afd in the vodka and fry it off until it evaporates. 5. Pour in the double cream and some pasta water (I used most of the water) and let it thicken up. Mix in the chilli flakes. 6. Add cooked chicken mix and pasta into the sauce. Season with salt/pepper. 7. Top with some fresh parley and Parmesan.
