@cookingwithrocco: Sunday Salad | This is my famous Sunday Salad… it’s not really famous, but it requested for every Sunday dinner and when I have company over… so close enough 🤷🏻‍♂️ Salad: • 1 head of iceberg lettuce • 1 roasted red bell pepper • 4oz can of black olives, sliced • 1/4 red onions, thinly sliced • 1/4 cup sliced peperoncini Italian Vinaigrette: • 1/2 cup to 3/4 cup red wine vinegar, plus more if needed • 2 garlic cloves, grated or pressed • 1 tablespoon dried oregano • 1 tablespoon dried basil • 1/2 teaspoon red pepper flakes • 1 tablespoon honey, or granulated sugar • 1/3 to 1/2 cup freshly grated parmesan cheese • 1 teaspoon salt • 1/2 teaspoon black pepper • 1 cup olive oil Add all the vinaigrette ingredients to the base of a blender, or a container for a hand blender. Blend on high for 30 seconds to 1 minutes until the dressing emulsifies. Store in the fridge until you’re ready to use. If the vinaigrette separates in the fridge, just shake or whisk it up. Add all the salad ingredients to a large bowl. Then pour over as much dressing as your heart desires.
