If you live in a humid or hot climate 3-4 hours max rise time. Don’t overproof. When doubled in size they’re ready to bake. If you want them to rise quick, get a pot of boiling water and remove it from stove, place in oven next to rolls, they will be proofed in about 1.5 hours
