Choux vanille caramel Crème : 50 cl de lait 1 gousse de vanille 50 gr de sucre 4 jaunes d'œufs 45 gr de maïzena 50 gr de beurre 150 gr de crème entière 30% mg bien froide Bouillir le lait avec la gousse de vanille grattée. Mélanger le sucre avec les jaunes d'œufs et la maïzena, ajouter le lait et porter à ébullition. Retirer du feu puis ajoutez le beurre. Filmer au contact et laisser refroidir. Fouetter la crème pâtissière refroidie puis incorporer la crème montée. Pâte à choux : 250 gr d'eau 80 gr de beurre 1 pincée de sel 1 pincée de sucre 150 gr de farine 4 œufs Bouillir l'eau avec le beurre, le sel et le sucre Hors du feu ajouter la farine Remettre la casserole sur le feu et dessécher la pâte pendant quelques secondes. Verser dans un saladier et laisser tiédir Ajouter les œufs et fouetter jusqu’à l'obtention d'une pâte lisse et homogène. Pocher sur une plaque recouverte de papier sulfurisé Enfourner à 180° pendant environ 30min 🇬🇧 Vanilla caramel puffs Cream: 50 cl of milk 1 vanilla pod 50 g of sugar 4 egg yolks 45 g of cornstarch 50 g of butter 150 g of very cold 30% fat whole cream Boil the milk with the scraped vanilla pod. Mix the sugar with the egg yolks and cornstarch, add the milk and bring to the boil. Remove from the heat then add the butter. Cover with cling film and leave to cool. Whip the cooled pastry cream then add the whipped cream. Choux pastry: 250 g water 80 g butter 1 pinch of salt 1 pinch of sugar 150 g flour 4 eggs Boil the water with the butter, salt and sugar Off the heat, add the flour Return the pan to the heat and dry the dough for a few seconds. Pour into a salad bowl and let cool Add the eggs and whisk until you obtain a smooth and homogeneous dough. Poach on a baking sheet covered with baking paper Bake at 180° for about 30min
