Ingredients: -200g sweet potato -3 tbsp coconut oil -seasonings of choice (I went w/ salt, garlic powder, paprika) Directions below: 1.) Grab yourself a mandolin with a ridge-cut attachment. Slice your potato, rotating 90 degrees every slice. 2.) Soak your fries in an ice bath for ~20 minutes to release excess starch (this helps to keep them crispy). 3.) Drain and allow to dry as you heat your oil of choice to medium-high heat. 4.) Fry your waffles 2-3 minutes each side until golden brown. 5.) Allow to cool/dry on wire rack if available. Toss with your seasonings ~and~ 6.) Enjoy.
