Spanakopita, but in a loaf 🌿 All the flavors of a traditional spanakopita — spinach, feta & olive oil — in a softer, easier version you can slice and take with you 🤍 Ingredients: * 3 eggs * 70 g olive oil * 120 g Greek yogurt (or kefir) * 2–3 tbsp milk * 1 tsp honey or sugar * 220 g flour * 10 g baking powder * ½ tsp baking soda * ½–1 tsp salt * 250–300 g spinach * 150 g feta, cubed * 1 small onion or 2 spring onions * 1 tbsp dill Steps: 1. Sauté onion, add spinach until wilted. Cool, add dill, then squeeze out excess moisture. 2. Whisk eggs, olive oil, yogurt, milk & honey. 3. Mix flour, baking powder, baking soda & salt. 4. Combine wet and dry ingredients. 5. Fold in spinach & feta. 6. Transfer to loaf tin, top with olive oil & sesame. 7. Bake at 180°C for ~40 min until golden. 8. Let it rest before slicing.
