Episode 54 | If she’s looking for a reason to get wet. #steak #frites #dinner  Main Course? Wagyu steak with a vibrant salsa Verde sauce to cut through the richness of the steak and served with classic fast food frites.  Notes: Classic dinner, easy to impress. The extra step lies in making the fries but adds this nice elevated touch that you'd get with the iconic Mc McDonald's fries. Regarding steak, I went for Wagyu, which is very heavily marble. On that note, for Wagyu or very fatty cuts of meat (significant intramuscular fat), I suggest medium internal temperature for a good rendered fat and pleasant enjoyment of the cut. That said, a grass-fed steak would work as well.  What's for dessert? Pavlova sea shell filled with raspberry and strawberry gel, heavy and double cream vanilla whip, fresh mixed berries for freshness, and a toasted marshmallow meringue ice cream.  Notes: This is a unique and exciting dessert with the toasted marshmallow meringue ice cream accompaniment. It blends so well with the whipped cream and crunchy meringue you almost forget it's there, yet it nonetheless brings that touch of wonder. The gel is almost the star of the dish, bringing the whole dish together between creaminess and freshness alongside the berries. Overall, it is a very balanced and impressive dish to serve.  Order of cooking? 1. Fries prep (Blanching/frying/freezing) 2. Salsa Verde prep 3. Dessert prep (ice cream/baked meringue) 4. Steak/Fries final prep 5.
