@sammypur: Thai Chicken Peanut Noodle Salad 💥 full recipe 👇🏼 CHICKEN - slice up super thin against the grain - season w/ salt and pepper - Sauté on medium high heat in avocado oil for about 4 mins or until golden brown - Toss in peanut sauce for another minute PEANUT SAUCE: - 2 tbsp soy sauce, - 1/3 cup crunchy peanut butter - 2 tbsp lime juice - 2 tbsp honey - 3 tbsp rice vinegar - 1 tbsp sesame oil - 2 tbsp minced garlic - 1 tbsp grated ginger - 2 tsp chili crunch sauce (I used momofuku from Whole Foods but TJ’s has a great one too) - Mix together until smooth or pulse in the blender for a few seconds SALAD - 1 cup cooked rice noodles - 1/2 cup shredded cucumber - 1/3 cup shredded carrots - 1/4 cup shredded bell pepper - 1/4 cup mixed cabbage - 2 tbsp crushed peanuts - 1 tbsp diced green onion - Sprinkle of sesame seeds (inspo is from @abbeys_tummy you changed my life with this one!!!) #easylunchideas #quickrecipes #healthymealinspo
