This is a super easy marinade that can be used on chicken, lamb, beef or pork. ~ 1/2 cup red cooking wine ~ 1 cup cilantro (mostly stems) ~ juice of 1 lime ~ 2 tbs garlic ~ 4 tbs chipotle peppers in adobo ~ 1 tsp salt ~ 1 tbs cumin ~ 1 tsp oregano ~ 1 1/2 tsp pepper ~ 1/2 tsp or more of cayenne (optional for preferred spiciness) ~ 2 tsp annatto sazon ~ 3 tbs oil Add all ingredients into a bowl or processor. Blend until slightly chunky but smooth enough to pour. Add to up to 4 steaks, 4 chicken breast or 2 pork loins and marinate for 2 hours or overnight. You can also reserve marinade before adding to the meat to serve on top after cooking as well!
