Strawberry Tiramisu🍓✨🇮🇹A berry fun twist on my favorite Italian dessert (full recipe below!) ✨Ingredients: 250 gr strawberries, diced 175 gr cane sugar 100 ml water 750 gr mascarpone 5 medium eggs 120 gr cane sugar 100 gr freeze-dried strawberries Savoiardi / ladyfingers (enough for two layers) 150 gr strawberries, sliced  Wash and cut 250 gr of strawberries into small pieces; add to a small saucepan with sugar and water. Cook over medium heat and bring to a boil, then lower the temperature and simmer for 15 to 20 minutes. Cool down. Separate eggs and place egg whites and yolks into different bowls. Add 80gr of sugar into the bowl with egg yolks and whisk until they thicken and turn a pale yellow. Then add room temperature mascarpone cheese 1/3 at a time. Whisk together until all the cheese is fully incorporated and clump-free. Blend freeze-dried berries into a powder, add 50gr to the cheese mixture, and whisk until incorporated. In the bowl with egg whites, add the remaining sugar and whisk until reaching soft peaks to make a meringue. Then, fold in 1/4 of the egg white meringue at a time and fold into the cheese mixture using a spatula—slice about 100gr of strawberries. Take an 8x8 baking dish, add a few spoonfuls of the mascarpone cream to the bottom, and spread out evenly. Then dip the lady fingers into the strawberry syrup to quickly absorb it then evenly line them to cover the bottom of the dish. Add more cream on top to create an even layer, then add an even layer of strawberry slices. Then, repeat the process with the lady fingers. Add remaining mascarpone cream and spread with a spatula until even. You can eat it immediately or refrigerate it. Once ready to eat, dust the remaining freeze-dried berry powder on top. This part is optional, but I blended the remaining berry syrup to make a berry compote (added 1 tbsp of cornstarch diluted in water and brought to a boil, then cooled down) and drizzled on top.
