@dr.doodoolicious: CRISPY RICE PAPER SHRIMP SUSHI ROLL Nutritional value: 7.6 g dietary fiber, 47.1 g protein, 175 g veggies Prep: <10 min Cook time: 8 min Portions/Serves: 4/1 Ingredients: ·4 rice paper sheets ·2 nori sheets, each cut into 6 equal pieces ·100 g cooked, peeled and deveined shrimp ·50 g carrot, julienned ·50 g Japanese or Persian cucumber, julienned ·½ avocado, sliced ·150 g cooked sushi/Japanese rice ·kewpie mayonnaise ·sriracha sauce ·3 tbsp black and/or white sesame seed ·neutral oil ·(GF) soy sauce and wasabi Method: -Dip a rice paper sheet in warm water for a few seconds until it is pliable, lay it down on a damp surface. Place one piece of nori in the center, add 2 tbsp sushi rice on top and pat down, followed by 3 shrimps. Drizzle kewpie and sriracha on top (measure with you heart). Then add avocado, carrots, cucumbers and top it off with a little bit of kewpie and sriracha. Finish with another nori sheet. Fold the bottom edge over the filling, press out any air bubbles or they will burst while cooking, fold the sides toward the center and roll it up. Make sure you completely seal it, otherwise use a second rice paper sheet. Repeat the process until you finish all the rolls. Sprinkle sesame seeds on a dry plate and roll the rice paper rolls in them. Heat a bit of oil in a nonstick pan over medium high heat. Add the rolls and pan fry them for 3-4 min each side until crispy and golden. Then transfer onto a plate lined with paper towels to drain excess fat.
