Hi 👋, silly question, why do you boil the dumplings when potatoes are already cooked? Can u skip that step and place them directly onto the frying ?

I think the little indent is meant for helping the chilli oil sauce to cling to the dumpling. Probably don’t need to do it just with a dipping sauce
