Mix the peanuts (75 g) with the caramel. In a deep bowl, combine mascarpone, granulated sugar, vanilla sugar, and whipped cream stabilizer. Mix for 1 minute. Gradually add the heavy cream (250 ml) and mix until stiff. Dip the ladyfingers in milk and arrange them in a dish. Spread half of the cream over the ladyfingers and smooth it out evenly. Spread half of the peanut-caramel mixture over the cream. Add another layer of ladyfingers. Spread the remaining cream over the ladyfingers and smooth it out evenly. Add the remaining peanut-caramel mixture. In a saucepan, heat 75 ml of heavy cream until it is almost boiling. Remove from heat and add 150 g of chopped milk chocolate. Let it sit for a minute, then stir until well-combined. Add the peanuts (25 g) and mix well. Pour the chocolate mixture over the layer of peanut caramel. Refrigerate until firm, preferably overnight. Garnish with peanuts and caramel. EXTRA 80 ml water 150 gr granulated sugar 8 gr vanilla sugar (1 sachet) 200 ml heavy cream 75 gr unsalted butter In a saucepan, bring the water together with the granulated sugar and vanilla sugar to a boil over medium heat. Once the sugar has completely dissolved, increase the heat to high. Boil for 5 minutes or until the sugar mixture has turned a brown color. Once this happens, turn off the heat. While stirring, add the heavy cream (make sure you cook the heavy cream separately before adding it). Mix well with a whisk. Add the unsalted butter and stir until fully combined.
