For the cabbage salad: (each meal has 1 cup of the salad) 1 bag (10oz) shredded purple cabbage 1 bag (10 oz) shredded carrots 2 Roma tomatoes chopped 1 medium yellow bell pepper cut in small slices then halved Salt to taste 2 Lime juice Notes: in a large bowl add all ingredients for the salad. Mix well and allow lime juice & salt to marinate all together with the veggies. You may add more lime juice if necessary or you can also use your favorite low cal dressing over salad instead. Other toppings: Tortilla strips Minced green onions Slice of lime This meal prep is super easy to make, it literally took me 1 hour to prep & cook.
