lunch < any meal of the day - working from home made me realize lunch is certainly not my favorite meal of the day. Prepping some dishes to have in your fridge helps, like this: Cilantro Lime Fava Bean Dip Recipe (makes 1 quart) 400 g frozen or canned fava beans, or any other bean 3 garlic cloves 1/2 teaspoon fennel seeds 1/2 teaspoon turmeric 1/4 teaspoon cayenne 1/4 cup extra-virgin olive oil, plus a glug for sautéing Juice of 1 lime 1 bunch of cilantro, chopped 2 jalapeño peppers, chopped 5 scallions, chopped 1 cup greek yogurt, cottage cheese, or vegan yogurt Salt and pepper Instructions 1. Add a glug of oil in a pan on medium heat. Add the drained beans and garlic. Cook for 2 to 3 minutes. Add the turmeric, cayenne and fennel, and cook for 2 to 3 more minutes. If the beans start to stick to the pan, add a splash of water. 2. Add everything from the pot to a food processor or blender. Add the remaining ingredients in. 3. Blend until smooth. Taste and season with more salt if needed. 4. Store in the fridge up to 5 to 7 days.
