100% Spelt Sourdough Loaf. 🌾 Spelt is an ancient grain that is related to wheat but with one big difference - the gluten is very different and you ideally need to use it as you would wholemeal (ie. add some white flour for support). I have added spelt to my master recipe before, substituting out some wheat flour, and enjoyed the subtle nutty undertones it gave the bread and have always been intrigued what a 100% loaf would work out like. I spoke to a few bakers who work with grains other than white bread flour and they advised that I should treat it (as in, my expectations) like a wholemeal loaf - don’t expect a crazy oven spring, but do expect a real depth of flavour. I can’t pretend this was an easy dough to work with. I added my normal 350ml of water which, at first, was fine - I converted some of my starter to spelt and used 400g white spelt, 100g wholemeal spelt. At the third coil fold I added poppy seeds (more in a mo) and the dough fell apart. I had to spend a good 20 minutes through a combo of coil folds and some gentle kneading with a bench scraper to bring it back together and did have to add in some additional flour to try and get it back under control. This is slightly over fermented (some of the bubbles have started to collapse at the top) and it has a really interesting flavour - VERY nutty, quite earthy.
