veggie, potato, egg, and cheese breakfast tacos 🌮🍳🫑🧀🥔  Ingredients (makes 10-12 tacos): - 10 tortillas (I used corn) - 10 eggs - 1 green bell pepper, finely diced - 2 cups baby potatoes, finely diced - 1 bag of reduced-fat shredded Mexican cheese (1 tbsp per taco) - 1 tsp olive oil  - Salt and pepper to taste Instructions: 1. In a large non-stick skillet over medium heat, add 1 tsp of olive oil. Sauté the green bell pepper for 2-3 minutes until lightly browned. 2. Place the diced potatoes in a microwave-safe bowl, cover with water, and microwave until softened. 3. In a mixing bowl, crack the eggs and whisk them. Evenly distribute the cooked eggs and potatoes between the 10 tortillas. 2. Sprinkle it with cheese. 3. Wrap each taco in a paper towel and then in foil. 4. Freeze until ready to eat. 5. Once ready to eat, remove the foil but keep the paper towel. Microwave for 1-2 minutes or until thoroughly heated. 6. garnish with green onion and hot sauce  7. I paired mine with cherries or a peach 8. Enjoy!
