Someone said eugh when they saw me cooking black daal. And now I’m sad…. for that person because they’re missing out on some of the best stuff in the world. Ingredients: For daal: 3/4 cup Urid Daal 1/4 cup Chana Daal 1/4 cup Rajma Beans 1 Red Onion 3-4 Green Chillies Fresh Ginger (thumb size piece) 1 tsp Turmeric Large pinch of Salt 6 Mugs of Water For Tarka: 3 tbsp Ghee Pinch of Cumin Seeds 1 Large Red Onion 6 Garlic Cloves Fresh Ginger (thumb size piece) 2 Tomatoes 3 Green Chillies Pinch of Salt 1.5 tsp Coriander Powder 1 tsp Kashmiri Chilli Powder 1 mug Water 1 tsp Garam Masala Handful of Fresh Coriander Method: 1. Wash the lentil 3-4 times then allow them to soak for at least 2-3 hours.  2. Once done, add the lentils to a deep pan with a 1.5 litres of water and bring up to heat. Slice the red onion and add in, followed by the green chillies.  3. Then grate in the ginger. Then add the turmeric and salt and stir well. Simmer on just above medium heat for 30-40 minutes until the lentils have softened and can be broken down easily between your fingers when pressed.  4. In the meantime, prepare the tarka by melting the ghee in a pan and add the cumin seeds and cook for a minute. Then slice the onion, garlic and ginger and add in, followed by the salt. Stir well until onions start to soften. Keep it on medium heat as you don’t want to sauté the onions. 5. Dice and add the tomatoes and chopped green chillies, the stir well. Cook until the tomatoes break down. Add in the coriander powder and Kashmiri chilli powder, with a splash of water and stir well. Cook for a few minutes until the oil separates. 6. Once the daal is done, transfer the contents to the onion and tomatoes, followed by a mug of water, bring up to heat and stir through. Put the lid on and simmer for 5-10 minutes on low-medium heat. 7. Once done, sprinkle over some garam masala and cook for 5 minutes whilst stirring. Finally add in chopped fresh coriander and stir through. Reduce the daal down to your desired consistency.  #Recipe #indianfood #indianrecipes
