Add the powdered sugar, vanilla sugar, and salt. Mix. Add the eggs one at a time to the bowl. Mix. Add the flour and baking powder. Knead until smooth. Divide the dough into 3 pieces, 540 g each. DOUGH 1 Take a piece of the dough and place it in a deep bowl. Add and mix the ground pistachios and lemon zest. Place the cookie dough on a floured surface. Roll out the dough (thickness 0.5 cm). Take a cookie cutter and cut out the desired shape. Place it on a sheet of parchment paper. DOUGH 2 Take the second piece of dough and place it in a deep bowl. Add the cocoa and mix. Take a piece of the dough (20 g) and shape it into a ball. Roll into a stick (8 cm long) Place the chocolate sticks on parchment paper. DOUGH 3 Take some of the dough (18 g) and roll it into a ball. Place the egg white and ground peanuts in separate bowls. Take a ball and flatten it. Dip it in the egg white and then in the chopped peanuts. Press your index finger into the dough to create a hole and place on parchment paper. Cook the jam and sugar until it starts to bubble and the sugar has dissolved. Let it cool and put it in a piping bag. FINISHING Bake the cookies for 10-15 minutes in a preheated oven at 190 ℃. Fill the peanut cookies(1) with the jam. Melt the white chocolate. Dip the pistachio-lemon cookies(2) into the melted chocolate and place them on parchment paper. Put the remaining white chocolate in a piping bag. Garnish each cookie with chocolate stripes, pistachios, and rose petals. Let the chocolate harden. Melt the milk chocolate together with the sunflower oil.
