@macy.blackwell: King Ranch Chicken Casserole!🐓😋 Cory’s mom makes a version of this, and it’s always so yummy!! Found this recipe from @aspicyperspective! We chowed this for dinner last night! Ingredients: 5 cups chopped cooked chicken (I used rotisserie) 2 cups sour cream 1 onion 4 gloves minced garlic 1 tablespoon butter 16 oz jar tomatillo salsa verde 13.5 oz chopped green chiles 1/2 cup chopped cilantro 2 teaspoons ground cumin 4 cups shredded Mexican cheese 20 white corn tortillas Directions: 1. Add butter to a skillet. Throw in onions and garlic. Sauté. 2. In a large bowl add chicken, sour cream, salsa verse, green chiles, cilantro, cumin, and sautéed onion mixture. Combine. 3. Tear tortillas in bite sized pieces. 4. Layer 1/4 chicken mixture, 1 cup cheese, 1/4 tortillas. Repeat until you have 4 layers. Ending on cheese. 5. Bake for 20-25 minutes on 400 degrees.
