4lbs of pork neck bones 4 cloves of shallots (optional) 6-8 stems of lemongrass 3 onions 1 bunch of green onions 1 tbs salt 70g of rock sugar  2 Tbs of fish sauce + 6 after 2 Tbs of shrimp paste + 4 after 1 tbs of chicken powder + 1 after 3 fresh Thai chilli peppers (optional) 1 tbs of annatto seeds 2 of 400g packs Bún Bò Huế noodles 3 Tbs olive oil 1-2 lbs of Vietnamese sausages 1-2 lbs of beef balls Boil a big pot of water with salt and chopped shallots. Once water starts boiling, add neck bones in. Boil them for 10 mins. After that strain the bones and rinse them very thoroughly with cold water. Crush the lemongrass. Then cut them into shorter strips. Cut 2 onions in halves. Add lemongrass into the instant pot, then bones & onions. Add 2 tbs of fish sauce, 2 tbs of shrimp paste, 1 tbs of chicken powder, rock sugar. Add water to the max mark of the instant pot. Choose broth setting or high pressure for 1 hour. Don't forget to close the valve after you close the lid. Once done, release the pressure, scoop the bones and all the veggies out. Add more water to the max line of the instant pot again. Put the pot back in and boil it on sauté setting.  Grab a new pan. Turn heat on to medium. Add olive oil. Once oil is hot, cut Thai chilli peppers in. Lower heat to medium-low and cook chilli peppers for 6 mins. Then turn heat up on high. Once oil is hot on high heat, take pan off the heat and immediately add annatto seeds im. If you forgot to take pan off heat, annatto seeds will burn very quickly. Pour this annatto seeds oil only into the broth. At this point, add more shrimp paste, fish sauce, chicken powder, or rock sugar (if needed) to adjust it to your liking.  In another big pot, fill water up to 2/3 of the pot. Boil it. Once water boils, add Bun Bo Hue noodles in. Cook them for about 20-30 mins. Stir every 4-5 mins to prevent noodles sticking to the bottom of the pot. Taste it to see if the noodles are cooked enough, strain the noodles out and rinse it through cold water.  Add noodles, bones, Viet sausages, beef balls into a bowl, microwave this for 2 mins. Then add onions, boiling hot broth, and finish with some green onions. Enjoy!
