@thechefmine: Episode 27 of 30 of the Ramadan series: Cardamom crème brûlée 🍮 Recipe below 👇🏽 Ingredients: 2 cups/600ml heavy cream 2 tsp vanilla extract or 1 vanilla bean ¼ tsp salt 2 ½ tsp ground cardamom 5 egg yolks ¼ cup-½ cup sugar depending on taste, plus more for topping Steps: 1. Preheat oven to 160C/325F. 2. Add heavy cream, vanilla extract or vanilla bean with the beans scraped, salt and ground cardamom to a saucepan over low heat. 3. Add egg yolks and sugar to a bowl and beat well, until pale (see video). 4. Carefully stir in about ½ cup of the warm cream into the egg yolk mixture. 5. Mix until combined then pour the contents of the bowl into the saucepan with the rest of the cream and mix. 6. Pour the custard into ramekins, about ¾ of the way each. 7. Place the ramekins in a baking dish and pour hot water into the dish, about halfway up the ramekins. 8. Bake for 30-35 minutes. The crème brûlées should jiggle slightly when you shake them. 9. Remove from the water and place the ramekins in the fridge uncovered for at least 4 hours. 10. Immediately before serving, add about 1 tablespoon of sugar to the top of the crème brûlée and shake it around. 11. Get rid of the excess and torch the sugar with a blow torch. 12. Wait a few seconds for the sugar to harden. If the top is too thin for you add more sugar and repeat as needed. 13.
