In a large mixing bowl, combine the ground biscuits, grated coconut, and condensed milk. Mix until well combined. Divide the cookie dough into 4 equal portions (150 g each). Take one portion of the dough and knead it until it holds together well. Place it on your work surface and roll it out into a 33 cm long log. Sprinkle some grated coconut on a sheet of baking paper and place the coconut bar on top. Roll the log in the grated coconut until it is fully coated. Place the coconut bar on another sheet of baking paper and repeat the process. Using a chopstick or any other pointed object, make a deep hole from one end to the other along the center of each coconut bar. Melt the white chocolate in a double boiler. Fill each coconut bar with the melted white chocolate. Let the chocolate harden. Once the chocolate has hardened, slice the coconut bars into desired pieces. You can cut them diagonally for a fancier look. Tips: You can use any type of chocolate for the filling. Use a warm, sharp knife to slice the coconut cookies. Makes 40 cookies - 30 minutes
