Baklava cones with custard cream Ingredients •1 package Fillo pastry sheets
•1/2 cup butter, melted For the Custard cream •2 cups whole milk •1/2 cup sugar •3 tbsp cornstarch •1 pinch of sea salt •4 egg yolks •2 tbsp unsalted butter •Flavoring (choose from 1/2 vanilla bean, 1 teaspoon vanilla or other flavored extract, a few peels of citrus, 1 teaspoon orange blossom water, etc.) For the syrup •2/3 cup water •1/4 cup sugar •1/4 cup honey •Juice of 1/2 lemon •1 cinnamon stick •1.5 tsp rose water For decoration
1/3 cup chopped pistachios Method: For the syrup In a small pot, combine all syrup ingredients and heat over medium-high heat. Boil for up to 20 minutes or until the syrup slightly thickens. Set aside. For the custard cream In a medium pot, combine egg yolks, sugar, cornstarch, salt, and milk. Cook over low heat, whisking continuously until thickened like pudding. Remove from heat and whisk in butter and flavoring. For the cones 1.Remove Filo Pastry from the fridge and let it sit at room temperature. 2.Preheat the oven to 180 degrees Celsius 3.Place a sheet of Fillo Pastry on your work surface. 4.Brush with butter and fold the sides to form 3 layers. 5.Brush with butter again. 6. Fold the bottom right-hand corner of the Fillo strip upward to meet the left side, creating a triangle shape. Keep folding upward until you reach the top, removing any excess if needed. With a sharp knife, trim excess pastry and then open it up with your hands. Follow the video for visual guidance. 7.Place scrunched baking paper inside to hold shape. 8.Bake for approximately 30 minutes until golden. 9.Allow shells to cool for 5 minutes, then remove baking paper. 10.Dip the cones into the syrup, ensuring it soaks between layers. Drain excess. 11.Pipe custard cream into the cones 12. Sprinkle chopped pistachios on top of the cream-filled cones. #baklava
