@thejamlab17: My daughter is not a fan of paneer. Hence, I make this vegan spin on Paneer Matar called Tofu Matar that uses crispy baked tofu that I am a huge fan of, in place of paneer and soaked cashews provide the creamy base. It’s a great way to highlight fresh spring peas in this dish! The dish comes together fairly quickly once the tofu is baked. Aromatics such as onion, green onions, garlic and ginger are cooked in oil along with whole spices, and tomatoes. The mixture is blended with soaked cashews to form a sauce. The sauce is simmered with all the Indian spices. Peas and tofu and go in along with dried fenugreek and cilantro. Lap up the tofu matar with some garlic naan!
