Jerk Chicken Fried Rice! We had a small party where I made entirely too much jerk chicken and rice and peas. Was thinking of what I could turn it into and this came to me. It’s a great way to get another meal out of your leftovers and still tastes just as good as the first time. One thing of note would be that traditional fried rice is made with white rice which is fairly bland to start. You will really have to hold back on the seasoning depending on how well seasoned your jerk and rice is to begin with.  Recipe, 2 cups Left over Jerk chicken removed from the bone and chopped into bite sized pieces  3-4 cups Left over rice n peas  1 carrot - diced  1 white onion - diced  1 bunch scallion - chopped 2 cloves garlic - minced  1 inch piece ginger - minced  2 eggs 4 tablespoons vegetable oil  2 teaspoons sesame oil  2 tablespoons sweet soy sauce  1 tablespoon rice wine vinegar  In a wok on high heat add your vegetable oil. Cook your eggs while scrambling them. Remove from pan and set aside. In the same pan add 2 tablespoons of vegetable oil and begin to sauté your vegetables starting with your carrots first. Once all your vegetables are cooked down nicely approximately 2-3 minutes add the jerk chicken. Make sure you’ve chopped up your chicken into bite size pieces and removed it from the bone. Stir everything together and allow this to cook for approximately 2 minutes. Next add your egg and rice and peas, stir that in  really well to make sure everything gets a good mix. Once it’s all combined and hot mix in the soy sauce and vinegar and sesame oil.
