@primalgourmet: Arepa Reina Pepiada… ever so crispy on the outside, soft and fluffy in the middle and filled to the brim with a creamy and tangy chicken salad. Arepas are a staple throughout Venezuela and Colombia and are filled with everything under the sun, but as far as I can gather the Reina Pepiada (tr. “curvy queen”) is quintessentially Venezuelan and first appeared in Caracas in honour of Susana Duijm being crowned Miss World in 1955. You can use any kind of leftover chicken you have to make the salad (roasted, poached or rotisserie). I decided to roast some chicken thighs for extra flavour and juiciness. As far as the chicken salad goes, everyone puts their own little spin on it. This version is my absolute favourite and comes from my friends José and Maria who add a squeeze of fresh lime juice and a dash of Tajín, which takes things to the next level .
