What do you guys call this dish…because I know everyone has their own version of it🔥 INGREDIENTS 4 green plantains Juice of 1 lime 2 heads of garlic 1/2 a red onion (thinly sliced) 1.5 lbs of empellas or pork belly, diced 1/3 cup of reserved pork fat 1 tsp of salt 3/4 cup of reserved plantain water DIRECTIONS Chop your plantains with the skin on and place them in a pot. Add water, lime juice and salt to the pot and boil your plantains for 30 minutes. Salt your empellas / pork belly and fry them until crisp over medium heat. Once golden, use a slotted spoon to remove them from the pan and drain over paper towels. Be sure to reserve the rendered pork fat from the pan. In a pestle and mortar, mash your garlic. Add your mashed garlic to a frying pan with your reserved rendered pork fat and your onions. Sauté until the onions are translucent. Once your plantains are tender, remove from the heat and move the plantains without the skins to a large bowl. Be sure to reserve 3/4 cup of the water the plantains cooked in. Begin mashing your plantains. Slowly add in the onion and garlic mixture as well as the plantain water. Continue mashing until minimal lumps are left. Mix in half the empellas and salt to taste. Serve your fufu in a bowl and top with remaining empellas and enjoy! #cubanfood #comidacubana #fufudeplatano #plantains
