@breadsbyreisy: High hydration sourdough (Advanced level) Autolyse by mixing together • 500 g. strong bread flour (@kingarthur) • 400 g. water (80% hydration) Mix using dough whisk until just combined. Cover and rest 1 hour. Add: • 100 g. ripe starter Mix until incorporated. Cover and rest 1 hour. Add: • 8.75 g. fine sea salt Dimple and then mix to incorporate. Cover and rest 1 hour. Perform 2-3 folds at 1 hour intervals until dough feels strong. When dough is almost double in size, full of air and bubbles, shape and transfer to banneton. Rest in fridge overnight. The next morning, score and bake at 450° for 30 minutes covered and 20 minutes uncovered. #sourdough #bread #baking #breadtok #sourdoughtok

Question! How do u get the dough when shaping to not flatten out? Noticed most high hydration loaves look mostly the same with that flat round bottom
